Apple cake
4 oz margarine
4 oz soft brown sugar
2 eggs
5 oz wholemeal flour
1 1/2 tsp baking powder
1-2 tsp mixed spice
2-3 tbs milk
4 oz raisins
1 cooking apple, grated
Cream marg and sugar together. Beat in eggs, one at a time. Add dry ingredients, and raisins, and beat until smooth, adding a little milk if required.
Grease and line a 8"-9" diam. cake tin. Spread half the batter evenly on the bottom of the tin. Follow this with the layer of apple, and then the rest of the batter. Sprinkle with Crumbly Topping, and bake in a preheated oven (Mk 5/375°F/190°C) for about 35 minutes, or until done. Alternatively, bake in a 9"x5"x2.5" loaf tin for about 50 minutes.
Cool in the tin, and serve warm or cold with custard, cream, or icecream.
